Chipotle Chicken Quesadillas!! …or Tinga Quesadillas!!

Tinga Quesadilla

Alright, alright….alright! Maybe not all that, but it is pretty darn tasty! Lets get started!

Tools:

  • large pot,
  • skillet,
  • blender,
  • tongs,
  • and a griddle.

Ingredients:

  • 2 lbs chicken leg quarters
  • salt and pepper
  • 2 garlic cloves
  • 1 large white or yellow onion
  • 6 roma tomatoes
  • 2 tbs corn oil (canola, or veg is totally fine)
  • 1/2 envelope of Sazon (for a little added flavor, but mostly for color)
  • small can of *Chipotle Chiles in Adobo Sauce*
  • mozzarella cheese, OR any melting cheese of your choice. (I prefer cheddar myself)
  • large flour tortillas (as many as you like)

Here’s what you do:

  1. Wash chicken pieces and place into a big pot. Fill pot with water, enough to cover 1 inch above chicken. Add 1/4 of your onion, 1 crushed garlic clove, salt and pepper to your pot. Place pot over high heat. Bring to boil, then turn down to medium-high heat and cover. Cook covered for about 30 minutes, or until chicken falls apart slightly. Once chicken is cooked, pull chicken pieces out of pot with tongs and let cool completely before handling. Shred chicken with your fingers (or pull apart with 2 forks). Set aside.
  2. Cut 5 of your tomatoes in half and cut out the seeds. Then dice them up. (You don’t want all that extra liquid.) Dice up 1/2 you onion.
  3. Heat oil in your skillet over medium heat. Sauté tomatoes and onions until tomatoes are broken down, (should look like the tomatoes are melting). Add your Sazon.
  4. In your blender, puree 1 quartered tomato, remaining 1/4 of your onion, 1-2 chipotle peppers (depending on how spicy you want it), 1 tbs of Adobo sauce from can of chiles, 1 minced garlic clove, 1 tsp salt and pepper.
  5. Pour puree into tomato and onion mixture in your skillet. Simmer mixture for about 5 minutes.
  6. Add shredded chicken to skillet and let simmer for another 2-3 minutes.

Let chicken mixture cool a little before assembling quesadillas.

Now that your Tinga part is done, its time to assemble quesadillas!

  1. Heat griddle over medium-high heat. Cook tortillas on one side, remove from heat briefly.
  2. On cooked side of your tortilla, fill with your cheese and as much chicken as you like.
  3. Return to heat to cooked on both side, or until the cheese inside is melted.

There are several other ways to enjoy your Chipotle Chicken!

1. Chipotle Chicken Tostadas!

Spread your chicken on tostadas and top with shredded cheese, shredded lettuce, diced tomatoes, and a dollop of sour cream.

 

2. Tinga Sopes! (Sopes are a sort of thick fried corn tortilla)

Spread refried beans on a sope, top with your chicken, shredded cheese, shredded lettuce, diced tomatoes, and a dollop of sour cream.
